Blaff de Poisson (Martinique) - Fish
For 4 people
Preparation: 20 minutes
Marinating: 2 hours
Cooking: 20 minutes
Ingredients
1kg fish (Snapper, Tuna, Wahoo ...)
1 Bouquet garni (Spring Onion, thyme, parsley, bay leaves)
7 lemons
1 Large onion
7 garlic cloves
2 peppers
10 cl oil
Salt pepper

Preparation
Wash and Soak your beans overnight in a bowl of water.
Wash the beans till the skin has peeled off.
Blend the beans with a little water till it forms a paste.
Pour your paste in a bowl and with a wooden spoon, whisk the paste till the mixture is light and fluffy
Add your seasoning, salt, chopped shrimps, chopped onions and pepper. (You can also choose to blend the onion and pepper and mix it in.)
Heat oil till moderately hot,scoop paste with a spoon and drop immediately.
Fry till golden brown and serve with Bread, Custard, Pap, or Asiko Ijebu Gari. Credit: (Afrolems Nigerian Food Blog)
Nigeria Akara - Bean Cake
Ingredients
2 cups of Asiko beans flour (use black eyed peas for best results)
1 small bulb of chopped onions
2-3 chopped small scotch bonnet peppers
Shrimps (optional- you can include any protein of your choice)
Vegetable Oil for frying
Seasoning
Salt
Asiko Chilli Powder

Preparation
Clean, Cut it into pieces if necessary.
Marinade for about two hours in a mixure of 5 lemons juice, 1 chopped chilli, salt, pepper and 2 crushed garlic cloves.
Clean Spring onion, garlic cloves and onion. Wash thyme and parsley. Tie into bouquet garni. Boil 1/2 litre of water in a Dutch oven and add the bouquet garni, the sliced onion, crushed garlic, oil.
Once the water start boiling, dip the fish and let it cook for 20 minutes.
Before the fish is cooked, add the juice of one lemon and a whole hot pepper for (flavour without puncture it)
This dish can be serve with yams, boiled cabbage, sweet potato or breadfruit, green banana, plantain. Asiko Platanos green Plantain strips as a side dish. Credit: (recipe and photo la recette de cuisine.com)

Maafe (Ivory Coast/Senegal) - Groundnut Stew
For 6 - 8 people
Ingredients

Oil -- 2 tablespoons

Stewing beef, cut into cubes -- 2 pounds

Onion, minced -- 1
-
Garlic, minced -- 3 to 6 cloves

Ginger (optional), minced -- 1 tablespoon

Tomato paste -- 2 tablespoons

Tomatoes, peeled, seeded and chopped -- 2 cups

Salt and pepper
Preparation

Heat the oil in a large pot over medium-high flame. Add the beef and saute until lightly browned on all sides, 5 or 6 minutes. Remove to a bowl and set aside.

Add the onion to the oil in the pot and saute until translucent, about 3 or 4 minutes. Stir in the garlic and ginger and saute another 1 or 2 minutes.

Return the beef to the pot, stir in the tomato paste and cook for about 1 minute. Stir in the chopped tomatoes and bring to a boil. Reduce heat to medium-low and simmer for 8 to 10 minutes to reduce the volume of the tomatoes somewhat.

Add enough water or stock to loosen the dish to a stewlike consistency. Simmer for another 10 minutes.

Stir in the peanut butter and salt and pepper to taste. Cover loosely with a lid and simmer for another 40 minutes, or until the beef is tender and oil rises to the surface of the dish. Add water as necessary to keep the dish stewlike.

Adjust seasoning and serve with rice or couscous.
