Healthy Asiko Plantain Crisps.  The Alternative to Potato Crisps!

Plantain Fritters

Preparation

 

  • In a bowl, roughly mash the plantains, then set aside.

  • In a mixing bowl, whisk together the Asiko Plantain flour, baking powder & salt.

  • In a small bowl, beat in the eggs until fluffy.

  • To the flour mixture add the beaten eggs, crushed red pepper & butter & then the milk, beating with a fork until the mixture is smooth.

  • Stir in the mashed plantains, & add more milk if necessary ~ Batter should be of a dropping consistency.

  • Drop by the spoonfuls into a  preheated frying pan for 4-5 minutes,until evenly brown.

     

       Serve immediately or prepare in advance and leave in fridge.  These delicious fritters can be eaten hot

       or cold.

Plantain Pancakes

  • Peel 2 ripe plantains and cut them into large chunks, 2 eggs, 1 table spoon of coconut flour, a pinch of salt and oil. Put all the ingredients into a bowl. Mash until all the ingredients are smooth and a batter has formed.

 

  • Heat a large skillet over medium-low heat. Add about 1 heaping teaspoon of coconut oil or your fat of choice to the pan and let it melt. Form pancakes using about 2 Tablespoons of batter. Cook approximately 3 minutes on each side or until each side is golden brown. Repeat until all the batter is gone.

 

  • Serve with fresh berries and a side of eggs and bacon for a complete breakfast.


 

 

 

Cassava Cookies

Ingredients:

 

150g Asiko Cassava flour                                            1 Egg

100g Plain flour                                                             250g Brown Sugar

50g Oats (preference)                                                  1 teaspoon Baking Soda

250g Butter                                                                   1/4 teaspoon of Cinnamon

1/4 teaspoon Salt                                                          1/2 cup of white chocolate pieces

 

Preparation:

 

Preheat oven to 175 degree.  In a large mixing bowl, melt the butter and sugar add the eggs, cinnamon, salt, oats, flour and baking soda mix all with your fingersuntli you got a smooth dough. Then add the chocolate pieces.  Allow thw the dough to set for a few minutes.  In the meantime, line a baking sheet with parchment paper.  Roll and shape dough into baking tray.  Bake around 8 - 10 minutes. .
